The Unit • The theme for Unit 4 is food in the context of Peruvian culture. The participants in the challenge learn to make a Peruvian dish. • The teams find the best recipe in Lima for sancochado, and then face the following challenges: −Desafío 1. Tim and Mack are in Iquitos and must cook a meal including a fruit drink. −Desafío 2. Tess and Patricia need to cook seco de carne, a typical dish from Cuzco. The twist to their task is they may only buy one ingredient at each store they visit. −Desafío 3. Andy and Janet prepare ceviche while they are in the northern city of Chiclayo. −Desafío 4. Peru • Peru is bordered by Bolivia, Brazil, Chile, Colombia, Ecuador, and the Pacific Ocean. In the pre-Columbian era, Peru played host to the Incan Empire. The empire was eventually colonized and ruled by Spain from the early 16th century until the early 19th century. Finally, in 1879, Peru was recognized as an independent nation. • Focus attention on Peru by asking students to say what they know about this country, its people, and its traditions. Ask them to describe the foods, historical figures, and events that they associate with Peruvian culture. • Elicit personal experiences related to Peru and its culture: Has anyone ever visited the Machu Picchu ruins? Teaching Suggestions El seco de carne Peru has a large number of traditional dishes, and this is one of the many reasons why Peru is considered a world leader on the current food stage. Cuisines vary widely across Peru’s coastal, Andean, and Amazonian regions. Seco de carne is one of those diverse dishes. It contains veal or beef, potatoes, carrots, and tomato and is similar to what Americans know as beef stew. El paiche Paiche is one of the largest freshwater fish in the world and is originally from Peru. They live in the Amazon River, which extends through Peru, Ecuador, Brazil, and Colombia. Paiche feed on other fish and small land animals. When these animals rest on low-lying trees, the paiche jump out of the water to catch and eat them. This fish can be expensive in local markets because its delicious meat can be used both for food and for medicinal purposes.
